When we talk about the gastronomic heritage of the South-West, we often refer to many specialities, but very rarely to the tourtière.
A tourtière is a sugary pastry made from baked apples flavoured with plum brandy and rum, covered with petals of dough that have been hand-stretched very thinly. Sophie, a native of the region, observed her husband's great-grandmother making tourtières, and soon asked her to share her knowledge so that this culinary tradition could be perpetuated. And the result is quite a success!
Her tourtières are generous, fragrant and perfectly crispy... a real delight for the eyes and the taste buds.
